A flat cast iron pan with a low rim, made for crêpes, pancakes and flatbreads. A wooden handle with a steel ferrule and a hanging ring; 20 or 26 cm across.
Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.
A low rim and a flat cast iron floor
- Material: black cast iron, cast with its short neck in one piece
- Rim: a low raised edge around a wide flat cooking surface
- Handle: turned wood on a steel ferrule, with a steel ring for hanging
- Sizes: 20 cm for an egg or a small pancake, 26 cm for full-size crêpes
Cast iron is heavy and takes a few minutes to heat through, then stays hot. Oil it lightly before each batch, and dry it on the heat after washing.

Care and cleaning
Wash the pan by hand with hot water and a brush, then dry it over a low heat. Wipe on a thin film of cooking oil before you put it away, so it stays seasoned and free of rust.
