Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.

Care and cleaning

Wash the pans by hand with hot water and a brush, then dry them at once over a low heat. Rub in a thin film of oil before storing. Keep them out of the dishwasher and do not leave them to soak.
