Caring for a wooden board
Wash a wooden board by hand, dry it standing on its edge and oil it now and then with a food-safe oil. Never soak it or put it in the dishwasher: water that soaks in makes wood swell and crack.
A flat metal board that rinses clean
- Surface: smooth brushed metal that does not absorb liquids or smells the way wood can
- Profile: thin and flat, so it stores upright beside the hob or in a drawer
- Handle: an oval cut-out near the top edge to lift it or hang it on a hook

A metal board is harder than wood or plastic, so knife edges dull faster on it: hone your knives more often. It is thin and light, so lay a damp cloth underneath if it slides on a smooth worktop.
