Caring for your knives
Hand-wash and dry a knife straight after use; a dishwasher dulls the edge and can crack wooden handles. Cut on wood or plastic, never on glass, stone or a plate, and store knives in a block, a sheath or on a magnetic strip.
Wide, flat and made for chopping
- Blade: 17.6 cm long and 4.4 cm deep, with a flowing Damascus pattern and a row of hollow scallops above the edge.
- Edge: flat and ground on both sides, for left- and right-handed cooks.
- Handle: red resin with pale burl wood and a steel bolster.
- Weight: 218 g, 31.3 cm overall.
Good to know: every resin and wood handle is poured and cut one at a time, so the red and the wood grain fall a little differently on each knife.
