A tall stainless steel pot with a lid, a spout and a handle, plus a mesh frying basket and a fine strainer dish. Fry a small batch, then strain and keep the oil.
Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.
Fry, strain, keep
- Pot: brushed 304 stainless steel with a pouring spout and a side handle (supplier-stated)
- Lid: steel, with a loop handle, to cover the oil between uses
- Basket: a mesh frying basket on a wire hook that hangs inside the pot
- Strainer: a fine mesh dish that sits in the mouth to catch crumbs as oil is poured back
- Capacity: 1.5 or 2 litres
Never fill the pot more than halfway with oil, and let used oil cool before pouring it through the strainer.

Care and cleaning
Wipe out the oil, then wash the pot, basket and strainer in hot soapy water. Dry everything before storing oil in it again.

Can I store oil in it? Yes. Strain the cooled oil back into the pot and keep it covered with the lid.
What can I fry in it? Small batches: a few prawns, chips, tempura or spring rolls.
