Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.

Care and cleaning
Wash by hand with hot water and a brush, then dry the pan on the heat and wipe on a little oil. Keep it out of the dishwasher and never leave it to soak. Regular seasoning keeps the surface in good order, as the supplier advises.

What if rust spots appear? Scrub them off, rinse, dry the pan on the heat and season it again with a thin coat of oil.
