Caring for your knives
Hand-wash and dry a knife straight after use; a dishwasher dulls the edge and can crack wooden handles. Cut on wood or plastic, never on glass, stone or a plate, and store knives in a block, a sheath or on a magnetic strip.
A long edge with an angled tip
- Blade: 27 cm with a bold Damascus pattern.
- Tip: angled, the kiritsuke shape, for fine point work.
- Handle: navy with a honeycomb texture, a steel rivet and a steel bolster.
- Use: slicing fish, trimming meat, long cuts through vegetables.
Good to know: this is a long knife. Check the length against your knife block or drawer before you order.

Care and cleaning
Wash by hand in warm soapy water straight after use and dry at once. Keep it out of the dishwasher, cut on a wooden or plastic board, and store it in a block, a sheath or on a magnetic strip.
Frequently asked questions
Is the angled tip fragile? It is fine and sharp. Use it for slicing and point work, not for prising or cutting bone.
Can it go in the dishwasher? No. Wash it by hand and dry it straight away; a dishwasher dulls the edge and can crack the handle.
