Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.
Speckled stone coating, with a lid when you need one

The lid comes only with the 24, 26 and 28 cm pans; the 30 cm pan is sold without one. Use wooden or silicone tools on the coating.

Care and cleaning
Let the pan cool before you wash it. Wash the pan and lid by hand with warm soapy water and a soft sponge, then dry them.
Frequently asked questions
Is there a lid for the 30 cm pan? No. The 30 cm pan is sold without a lid; the 24, 26 and 28 cm pans can be ordered with one.
Can I braise or steam in it? Yes. With the glass lid on, the deep sides hold vegetables, a sauce or a braise.
