Choosing the right size
Diameters are measured across the top rim; the flat base is usually 3 to 5 cm (1–2″) smaller. Match the base to your hob ring or zone. On an induction hob, check that induction is listed under Hob types: a magnet sticks firmly to a base that works on induction.
Ridged, coated, and flat when packed

Let the pan cool, then wash it by hand with warm soapy water and a soft brush between the ridges. Dry it well and keep metal tools off the coating.

Which size for two steaks? The 24 cm pan takes two steaks side by side; the 28 cm or 24 x 28 cm pan takes three or four.
